What Is Casein?
Casein gives milk its opaque white appearance. Cows milk is for baby calves, and human milk is for human babies. Cows milk is for baby calves up to the weaning period only. A calf’s skeleton must grow considerably large in a short time. A mother cow provides the bone-building material in her milk.
This bone-building material is called Casein. If you compare the casein content from cows’ milk to human breast milk, you will discover that there is 300 times more casein in cows’ milk. Human babies are not required to increase skeletal mass as quickly as baby calves. Does this make sense? Yes, of course, it does.
Cow’s milk is pasteurized by raising its temperature, which kills any bugs or bacteria, allowing milk to be stored for extended periods. Baby calves do not have a problem drinking milk from their mothers. They would die if you were to feed pasteurized milk to baby calves. Killing the vital enzymes in cows’ milk by boiling it is detrimental to their health and growth. Destroying the enzymes by pasturing milk does not eliminate the Casein.
Put another way, should a nursing mother leave expressed breast milk for a later feed, would she boil the milk or would gentle warming be sufficient? Freezing, boiling, or storing her milk for prolonged periods would not be appropriate. Milk needs to be consumed fresh from the mother to the infant.
